Scott Jurek’s wonderfully inspiring memoir gives us a peek into the journey of an ultra-marathoner as he transitions over time from a standard Midwest diet of meat and potatoes to a totally plant-based vegan diet. Interspersed between tales of training and races he shares some of his favorite vegan recipes including Minnesota Winter Chili, 8-Grain Strawberry Pancakes, and Strawburst Anti-Inflammatory Smoothie.
